Tvishi
A medium sweet, golden wine from the controlled appellation of Tvishi. This is located in the mountainous northern Racha-Lechkhumi region of Georgia, where some of the oldest evidence for winemaking in the world has been found. Made from 100% Tsolikouri grapes, hand-picked into small crates, and using just the best free-run juice, the fermentation is stopped by chilling when the wine reached just the right balance of sweetness. It’s actually beautifully fresh and zesty, and finishes crisp and clean, with notes of quince, pear and even a touch of mint. Try it with spicy oriental dishes or roast pork with apple sauce.
